Date for your baking diaries.....

Our next meeting is on Thursday 30 January at 7pm in Kesgrave Library.

The theme decided on this month is savoury bakes.  Simply bake a savoury item of choice, it can be anything you like, bring it along to share with new friends with a copy of the recipe.  Admission is £2.00 which includes tea/coffee.  Proceeds from the baking club are used to support projects at Kesgrave Library.

Anyone is welcome to join us as long as you bring along a home baked item.

Emma's Rocky Road Chocolate Cake


Emma baked a recipe from Jo Wheatley, Great British Bake Off Winner.  Check out her website if you need some ideas on what to bake (http://www.josblueaga.com)

Sponge
200 g plain flour
2tsp baking powder
40g cocoa
280g caster sugar
40 g melted plain chocolate (cooled)
80g marg
2 eggs
240 ml milk


Mix flour, baking powder, cocoa, sugar & butter in a food processor until you have a sandy consistency then add half the milk and blend.
Mix eggs, melted chocolate and rest of the milk together in separate bowl and add to the batter.  Give a good mix and divide into 2 sandwich tins and bake for around 25 mins at 160 and cool on wire rack.

Buttercream
500 g icing sugar
125 softened unsalted butter
30 g cocoa
2 tablespoons of milk

Mix butter and icing sugar together then add cocoa and milk.  Beat for 10 mins.

Sandwich the 2 cakes together with the buttercream, then spread the rest on the top.

Toppings
I used 1 Boost bar chopped, 2 packets of Malteasers, popcorn, mini marshmallows and white chocolate buttons but you could go crazy with any topping you like, then drizzle 100g of melted milk chocolate over the top.
